Jordan Hotels Association Holds Training Course on Sustainability and Food Waste Reduction for Amman Hotels

As part of its ongoing efforts to promote sustainability principles and advance environmentally responsible practices within the hospitality sector, the Jordan Hotels Association (JHA) organized a training course entitled “Sustainability and Food Waste Reduction” on Wednesday, 8 July 2026. The course brought together representatives of member hotels in Amman, as well as professionals working in food and beverage, kitchen operations, and hotel management. The training was delivered by Engineer Omaima Al-Majzoub.

The course commenced with welcoming remarks by Dr. Reham Al-Zughier, Director of the Jordan Hotels Association, who emphasized that sustainability has become a fundamental pillar in the development and competitiveness of the hospitality industry. She noted that adopting sustainable practices contributes to improving operational efficiency, optimizing resource utilization, and generating positive economic and environmental outcomes. Dr. Al-Zughier also reaffirmed the Association’s commitment to organizing professional training programs that align with international best practices.

The training aimed to raise awareness of the importance of implementing sustainable practices in hotels and to highlight the economic, environmental, and social impacts of food waste. It also introduced participants to best practices for reducing food loss and waste while improving resource efficiency, thereby supporting the long-term sustainability of hotel operations.

The course covered several key topics, including practical strategies for minimizing food waste in buffet operations through effective menu planning, accurate portion forecasting, consumption analysis, and efficient inventory management. It also addressed food service techniques that help maintain quality while reducing surplus, responsible and safe utilization of food products in accordance with food safety standards, and the integration of sustainability principles into daily hotel operations.

At the conclusion of the training, the Jordan Hotels Association reaffirmed its commitment to continuing the implementation of specialized training and awareness programs aimed at enhancing the skills of hospitality professionals and promoting the adoption of sustainable practices. These initiatives contribute to improving service quality, increasing operational efficiency, and strengthening the competitiveness of Jordan’s hotel sector in line with sustainable development objectives.
